About our Coffee

This is Artisan Roasted Coffee.  This means that the coffee is small batch roasted to a specific level of "done". 

This means that every single roast is custom made after you order it. All bags are 1lb not 12oz or even 8oz, that is why each bag is priced the way it is. Every roast takes into account outside temperature, humidity and individual beans while roasting, to bring each roast to the best, rich coffee flavor. 

There are 3 levels of roast for each kind of bean.  Full City: this is a full bodied medium roast its main characteristic is a very smooth flavor.  Full City Plus: this is a medium dark roast, still smooth, still full of flavor, this has the beginnings of the dark smoky flavor associated with darker kinds of roasts.

Last is the Vienna Roast:  this is the true Italian Espresso roast, made for espresso machines, this roast has the full dark without the burn of the French Roast. This roast is fully into "second crack", that is, this roast has cooked the beans to the point the oils inside the bean are pushed to the outside of the bean. This means that the beans have about two weeks to a month and that oil starts to go rancid, which is why a lot of dark roasts have that acrid flavor.

Most people will say that they love the darkest coffee.  "I want it dark!" However, on taste tests, most people really prefer Full City or Full City Plus. In my own experience serving coffee over the years, I have found this to be true.

Truly dark roasted coffee is bitter and acrid, and does have a burnt flavor (that some people love). You can get this coffee everywhere, it is easy to roast, and I do not do it because it is ubiquitous.

I focus on coffee that most people love to drink. I strive to make coffee that is smooth and full of flavor, tastes delicious and can be drunk black or with any other goodies you like to add.
